I do pick up my camera most every day (can't imagine what retirement would be like without my camera and PC to play with the pictures) and I get a great deal of enjoyment in working with it.

Croissants - Not an Easy Thing to Make
A couple months ago I suggested that, since we were no longer doing our Friday breakfast at La Madeleines, Glynda should learn to make croissants. A lot easier said then done. We found that after you've done all the mixing, there are still a lot of steps and a lot of time in kneading and chilling and rolling and kneading and chilling some more, etc., etc., etc. Hours of preparation. It took about four trys and a visit with Leonard (at La Madeleines) to master all of the steps. But she's got it now!! Just look at the flaky texture and the golden brown color. This is a GOOD croissant! I told Glynda it was even better than La Madeleine's and it is!

After our trip to Germany all those years ago I attempted the same thing so can really appreciate all the time involved. I have found that Central Market has some of the best store bought prepared croissants around.
